SOME USEFUL TIPS TO SAVE MONEY!
Capsicums:A very useful vegetable, adds crunch, shine and contrast to any dish Can be expensive and wasteful because you only use small amounts. Buy in bulk when cheap. You can then seed them & cut into slices/pieces.Just rub them with cooking oil to prevent sticking, and freeze in the fast freeze section of the freezer. You can add these to any curry or use as a garnish or add them to a slad. Always cut in thick slices or chunks, if your guests do not like them they can pick them out!

Carrot/green beans/Spinach: Handy vegetables to have in the freezer. Freezing also softens them up saving on cooking time.Drop into boiling water for 2 minutes, remove, drain, let cool and freeze in the fast freeze section of the freezer. You can add these to any curry.
Cauliflower can be expensive because you have to buy a whole head. Split into florets, drop into boiling water for 2 minutes, remove, drain, let cool and freeze in the fast freeze section of the freezer. You can add these to any curry or salad
Chickpeas: Very High in protein, a staple food of many Indians.Many are put off by not knowing how to use them. They are cheapest to buy Dry and in bulk. Cooking does not require any skill, just clean in very hot water, and soak overnight in the fridge. Drain and portion off in small freezer bags. When using these you can add them as you build the dish or Microwave and add to any leftover curry or soup. DO Not try this with Red Kidney Beans---dangerous. Canned chick peas are a shortcut but expensive and can become Mushy during cooking
Ginger: Very expensive out of season.Buy when in season, wash and scrub thoroughly, Slice into thin slices.Blend in blender adding some water, pour into ice cube tray and freeze. One Ice cube size piece will be enough for one curry. Ginger powder is NOT a substitute for Fresh Ginger!!

Green /Red chillis: Expensive out of season, Wash them, rub with oil (to prevent sticking), freeze in the fast freeze section of the freezer. Better still de-stalk, puree in blender and freeze in ice cube tray, result One cube= one fresh chilli (2" long,) Remember Chillis must be treated with caution. Use rubber gloves, or blend in a processor to avoid contact. If you must chop by hand, hold uncut part with one hand cutting with other, avoid handling cut pieces. We recommend you buy Prema Chilli and Garlic in a Jar to save above problems and to get a consistent taste, because chillis vary in strength from one chilli to another!

Soya chunks/Mince: Available in dehydrated form, add boiling hot water. Remember it triples in weight. Brilliant as a quick source of protein, You can add this to real mince to "stretch" real mince

Sprouted Beans: A fantastic, source of protein, Available from most supermarkets but very expensive Can be sprouted at home for a fraction of the cost.Wash the Mung Beans in very hot water, Tie a handful tightly in a damp towel and keep towel wet for 4 days. Rinse well and eat. The Usual bean sprouts you get have been sprouted for many days so they become watery and lose the sweetness.The sweetness you will get from 4 day old sprouts is unbeatable, BRILLIANT FOR ATHLETES. Use any Prema vegetable Mix to make a sauce. Try with other beans like chick -peas.

Paneer Indian cheese: Only available in blocks bigger than you can use, Best to cut into 1" cubes and freeze, You can also fry them before freezing, Can be added to any curry to provide contrast in colour and texture, Cannot Get Paneer? Try Greek cheeses like Anari and Halloumi, These cheeses are soaked in Brine to preserve them. These cheeses need to be soaked in fresh water to get rid of the salt from the brine. Add to curry without cooking.

Prawns:To be safe Always use cooked and peeled frozen prawns. Add the Frozen Prawns 5 minutes before the dish comes to the Boil.

Rice: Why cook a little at a Time? Cook more, let cool, spread thinly, and freeze in the fast freezer section. Portion into freezer bags or into microwaveable containers. Whenever you want some you have it in the freezer, just microwave.
